1. Preheat oven to 425.
2. Line two baking sheets with parchment paper.
3. In a small bowl, combine the arrowroot flour, garlic powder, parsley, paprika and salt.
4. Peel the sweet potatoes and cut into long, thin slices, about 1/4 inch thick.
5. Place the sliced sweet potatoes in a bowl. Cover with coconut oil and toss to coat. Add the spices and toss until evenly distributed.
6. Place the fries on the baking sheets in a single layer.
7. Bake the sweet potatoes for about 25 minutes, turning halfway through.
