 10 oz canned salmon
 3 scallions, finely chopped
 1 baked sweet potato, peeled and mashed
 2 tbsp finely minced fresh cilantro
 2 large eggs
 1 tsp sea salt
 1 tsp garlic powder
 3 tbsp olive oil

1. Mix together all ingredients.

2. Heat olive oil in a large pan over medium high heat.

3. Drop salmon cakes in pan using an ice cream scoop. Use a fork to flatten.

4. Cook on each side until brown.
