 1 salmon filet
 2 tbsp olive oil
 1 tsp sea salt
 1 starchy veggie, such as sweet potato or cauliflower rice
 1 green veggie, such as Brussels sprouts or asparagus
 1 tbsp olive oil
 1 tsp sea salt

Place salmon filet on a large pan lined with parchment paper. Spread olive oil and salt on salmon.

Bake at 375 for about 30 minutes or until flaky.

I serve this with one starchy vegetable, such as sweet potato or cauliflower, and one green veggie, such as asparagus or Brussels sprouts.

Remove ends of asparagus or chop Brussels sprouts. Place on another baking sheet lined with parchment paper. Sprinkle with olive oil and sea salt. Bake at 375 for about 30 minutes.

Place sweet potatoes in microwave to bake. Serve with cinnamon and coconut oil or coconut butter.

Alternately, make cauliflower rice. I mixed in celery, onion and dates, with cinnamon, garlic powder, sea salt and olive oil. Roast in oven at 350 for 40 minutes. Or stir fry over medium heat on stove top.
